These pancakes are so so so sooooo good. What’s even better about them is that they are also super healthy. On pinterest I saw that a lot of people were starting to make pancakes with bananas, which got me thinking about how I could make a recipe of my own… and that’s exactly what I ended up doing. Sometimes I can have a little bit of a sweet tooth in the morning and if you can relate, you need these pancakes in your life. I nailed it! lol.
All you need is what is in the picture, 1 banana, 1 egg, almond meal, pink himalayan salt, vanilla almond milk, ground cinnamon, baking powder, and coconut oil.
First, put the banana in the bowl and mash it with a fork, and add the egg. Then mix the two together (I used a hand mixer), and add the cinnamon (I shook the bottle about a good 5 times, sorry y’all I don’t really cook by measurements just by feel) and about half a spoonful of coconut oil, about 1 cup of almond meal, about two pinches of himalayan salt, and about 1/2 a tsp of baking powder. Mix those ingredients together, and when completely mixed add a dash of almond milk (or enough to get the normal pancake batter consistency). You can get about 3 pancakes out of this, but it really just depends on how big you decide to make yours.
This is how my batter looked. Now, heat the skillet and pour your batter into the skillet and spread it evenly, making your pancake the size you want it. When you see the little holes forming on the top of it, flip it.
Hopefully your flipping skills are way better than mine. Mine aren’t picture perfect but they was the bomb.
